Nothing is wasted in Chinese or Asian cuisine in general. At the food market, I met this man who uses a special tool to cut off various bones, cartilage, goose and duck necks, etc. A huge part of such products is dried, pickled or smoked and ends up in dishes. Others are highly seasoned and grilled as a snack.
